(I always enjoy this one.) Write about a character (or more!) of yours who is now the opposite gender. Is it a disguise? Did they actually become that gender? How’d it happen, or why? Can they go back to normal?
If you’re a girl, try writing from a guy’s point of view when he first meets a girl (or boy) he immediately likes.
If you’re a guy, try writing from a girl’s point of view when she first meets a boy (or girl) she immediately likes.
Write about a mundane scene—getting dressed, driving, making a meal—but write from the point of view of the opposite gender.
