I always think of gore as blood and guts and loving descriptions of evisceration. A bloody nose or a split lip? Unlikely to be gore. Your character fountaining blood from his chopped-off arm, described down to the last detail of the blood drops hitting the ground and spraying through the air? Definitely gore.
